Pickle Barrel’s Avocado Toast
- 2 poached eggs
- 1 slice thick multigrain bread
- ½ avocado (smashed)
- 2 slices tomatoes
- Mixed greens
- 1 slice Swiss cheese
- ¼ oz (7.4 ml) butter
- Pinch pea shoots
- ½ oz (14 g) spinach sauteed.
- 1.5 oz (44 ml) Vidalia onion dressing
- 1.5 oz (44 ml) Hollandaise kicker sauce
- 2 strawberries cut in half
- 10 blueberries
- Butter one side of bread and place on the grill to toast.
- Place the sliced cheese on the bread, followed by the tomato.
- Saute the spinach and place on top of the tomato.
- Smash the avocado and place on the length of the bread.
- Add the poached eggs on the avocado toast.
- Serve with a side of hollandaise spiked with TABASCO® Original red Sauce, the mixed berries and the mixed greens with dressing.
- Garnish with pea shoots.
